I love hummus. The man used to not like hummus much, casting odd glances in my direction when I polished off bowls of the pasty looking thing. Then one day, he ate it. Now he won't let me eat it in peace and most days he is confused, he orders hummus.
So I decided that I should make hummus at home. This entire experiment convinced me that the man has ideas about what he likes and what he does not, not all of which are based on facts. Hummus is yummy. And that's a fact. This same man, who hates radishes, loves Mooli Parathas. But of course, made my style, with cream cheese.
So it was only a matter of time before I found the answer to the bog fat beet root hate.
So, beet root hummus. Please make this. I know it looks like one huge red blob but seriously, I chose this over cheese and if you know me, you know I'd kill for cheese. Umm, sort of. Okay, I will maim for cheese. Please make this. It IS going to make you fall for beet root so much that you will buy beet root all the time. And it is easy to make so I bet you will make it every other weekend. So do :)
Name: Beet Root Hummus
Prep Time: 20 minutes to pressure cook beet root (2 whistles)
Cooking Time: 10 minutes

Serves: 2 people
You need:
2-3 medium beet roots, pressure cooked until soft (2 whsitles)
3-4 walnuts, toasted
2 tbsp white til / white sesame seeds, toasted
1 tbsp cumin / jeera seeds
1-2 large garlic cloves
2 tbsp breadcrumbs (for body, optional, but recommended)
Healthy dash of black pepper
Dash of rock salt
Dash of olive oil (1-2 tbsp is good)
Juice of 1 lemon
Here's how we make it:
- Pulse the bread crumbs with the toasted walnuts, cumin, sesame seeds, black pepper and olive oil.
- Add the pressure cooked beet root, garlic, lemon juice and salt. Pulse until smooth. If you think you want to thin it out a bit, add the reserve water from the beet root (from the pressure cooking). Adjust salt.
- Serve at room temperature with pita bread or just use it as a spread for your breads.
