Masala Egg Bhurji Recipe (aka Anda Bhurji) By The Gluttony Man



The man, as you all know, is a massive egg fan. So all kinds of egg recipes are made at home. But by far, his most loved egg dish remains to be the typical desi Masala Egg Bhurji or scrambled eggs cooked with spices desi style.

Now when I was an egg eater years ago, the bhurji wasn't exactly my first choice. I never really tried making it. And when I started making it for the man, I didn't pay much attention to it. Just the usual, onion, tomatoes, chillies etc. Until the man told me that he wants a 'really really good egg bhurji' and that I should come up with a recipe for it.

The problem with not eating eggs and creating a recipe for it? Well, it's a bit like shooting in the dark. But I tried several recipes and techniques but nothing got that 'wow' reaction from him. So I decided it was time.

Time to reach out to the biggest help centre on this planet. Twitter. I tweeted for help with perfecting a seriously great anda bhurji recipe. A simple, desi, no frills but delicious Egg Bhurji recipe that would really blow your skirt up in the air.

That's when The Gluttony Man, who seems to share all the culinary genius genes that his sister Caramel Wings has, came to my rescue. He sent me his Awesome Egg Bhurji recipe. I tried it out a few hours back. And I think I have found a keeper. This is going to be passed on in the family and shared until it makes it to the family recipe file. It is simple, it's indulgent, it's comfort food at it's height and the man loves it to bits.

Please make it. There must be no excuse whatsoever any more. Just make it. Coz it's the right thing to do.





Name: Masala Egg Bhurji / Anda Bhurji
Prep Time: 10 minutes
Cooking Time: 6-7 minutes
Recipe Source: The Gluttony Man
Serves: 1 greedy person

You need:

2-3 eggs
2 large onion chopped
2 tomatoes chopped
2 green chillies slit
1 tbsp freshly made ginger garlic paste (if you use readymade, I will disown you)
1 tsp red chilli powder
1/2 - 1 tsp sugar
Juice of 1 small lemon
Lots of coriander leaves, finely chopped
3 tbsp mustard oil
Salt to taste

Here's how you make it:

- Heat a wok on high. Add 3 tbsp mustard oil (you can use any other oil but please use mustard - adds lovely colour and pungency, and this oil has good cholesterol). When it's hot, add slit green chillies, onions. Saute quickly.

- When onions are mildly cooked (please retain some pinkness), add ginger garlic paste. Stir again. Add tomatoes, salt, sugar, red chilli powder and stir well. Cover and cook for a bit.

- Crack in eggs and stir vigorously until well mixed. Cover and cook for a minute.

- Add lemon juice and lots of chopped coriander. Adjust salt. Your egg bhurji is ready to be eaten as a side, with rotis or with garam pav and butter. Enjoy. Send lots of love to The Gluttony Man!
